Apple & Nut Coffee Cake



Ingredients:

  • 1 1/2 cups apple, diced in small pieces

  • 1 1/2 cup flour

  • 3/4 cup sugar

  • 1 tsp cinnamon

  • 2 tsp baking powder

  • 1/2 tsp salt

  • 1 tsp vanilla

  • 1 egg

  • 1/4 cup oil

  • 1/2 cup milk

Topping:

  • 1 tbsp flour

  • 1/2 cup brown sugar

  • 1/2 cup chopped nuts (pecans, walnuts, almonds, mixture etc.)

  • 2 tbsp butter, melted

  • 2 tbsp oats

  • 2 tsp cinnamon

  • 3/4 powdered sugar, if desired

  • 1 tbsp milk, if desired

Preparation:

  1. Preheat oven to 375 degrees.

  2. Using an 8x8 pan or mini loaf pan, grease and set aside.

  3. In a small sized bowl, mix flour, salt, baking powder, cinnamon & sugar.

  4. In a large bowl, add egg, vanilla, oil, milk and mix.

  5. Add dry mix to large bowl and mix to incorporate.

  6. Fold in apple pieces and pour into prepared pan. Set aside.

  7. In a small bowl, mix all topping ingredients except milk and powdered sugar.

  8. Sprinkle the topping mix evenly on coffee cake.

  9. Using a spoon, press the mix slightly down into the cake.

  10. Bake in oven for 30 minutes or until toothpick comes out clean.

  11. Mix powdered sugar and milk together and drizzle on top if desired.

  12. Set aside, cool and enjoy!

Tips:

  • If you don’t have oats, you can use flour- replace 2 tbsp oats with 1 tbsp flour.

  • You can use any kind of apple for this recipe. I used Macintosh, which is what I had.

  • You can make this in any kind of pan- bundt cake, cupcakes mix etc. Just make sure to adjust cooking time. Bundt cake time will be different than the cupcake pan.
