Artichoke & Spinach Alfredo



  • 1 12oz jar of marinated artichokes, diced

  • 1 tbsp minced garlic

  • 1/4 onion, diced

  • 2 cups spinach

  • 1 tbsp olive oil

  • 8 oz Alfredo sauce * I used lemon Alfredo sauce from Trader Joes (12oz jar)

  • 1/2 box of thin spaghetti

  • 2 cups reserved pasta water

  • Salt & pepper to taste

  • Romano cheese or parmesan for topping


  1. Heat large pan on medium high, add oil.

  2. Cook onions for 2-3 mins until translucent.

  3. Add garlic and artichokes.

  4. Cook for 4 mins or until the artichokes get slightly brown.

  5. Add spinach and cook for 1 min. Just enough to slightly wilt.

  6. Turn heat down to medium and add Alfredo sauce *it will be thick that’s why we are going to add the pasta water.

  7. Add 1/2 cup pasta water at a time for desired thickness of sauce.

  8. Add pasta and stir making sure the sauce coats all the pasta. You can always add more Alfredo sauce or pasta water.

  9. Add salt & pepper if desired * I didn’t think it needed it so I left it off

  10. Top with cheese and enjoy!

Notes/Quick Tips:


  • You can use any type of pasta you want. This will work with anything. Try it with tortellini!

  • Most Alfredo sauces will come in a 12oz or high jar size. Try to get one with lemon. That lemon taste really does add great flavor to this dish. If you can’t find one that has lemon in it, add 1 tbsp of lemon zest to your dish!

  • You can add more olive oil to the pan. I also like to add more oil based on how dry the dish looks. I’d rather not have too much oil so I start off with a smaller amount.
