Asparagus Salad

Ingredients:

  • 1 Bunch - Skinny Asparagus

  • ½ - ¾ Cup - Grated Parmesan

  • ½ Cup - Red Wine Vinegar

  • 1 TBSP - Olive Oil

  • 1 TBSP - Oregano

  • ¼ Tsp - Salt

  • ¼ Tsp - Pepper

Preparation:

  1. Chop asparagus into little bit size rounds, discarding woodsy stem.

  2. Add remaining ingredients and toss to combine.

  3. Refrigerate for at least an hour to let asparagus “tenderize”.

  4. Serve and enjoy!

Tips:

  • Don’t throw away those asparagus stems. Use them to add to stocks for flavor.

  • Grating your own cheese saves money but also leaves you with a flavorful rind. Use it to flavor sauces, soups, or even make an infused olive oil by placing the rind in a jar with some herbs and garlic cloves and cover with oil.

  • Get creative! Add diced red onion, use any hard grated cheese such as asiago or pecorino, or even play around with different vinegars such as apple cider or rice wine.
