Ingredients:
1/2 pkg puff pastry, thawed
2-3 green onions, diced
1/2 cup muenster cheese, shredded
1/4 cup parmesan cheese, shredded
1 tsp garlic powder
10 oz frozen spinach, thawed and drained
5-6 pieces of bacon (i.e. turkey or pork) cooked and diced into small pieces
1 egg, for egg wash
1 tbsp water, for egg wash
Flour for rolling the dough
Preparation:
Preheat oven to 400 degrees.
In a medium sized bowl, add muenster, parmesan, garlic powder, onion and bacon. Stir to combine.
Mix egg and water to create egg wash, set aside.
Flour a clean work surface and place thawed puff pastry.
Using a rolling pin, roll dough out on all 4 sides, slightly.
Brush egg wash over puff pastry.
Sprinkle spinach and then cheese/bacon mixture on puff pastry.
Roll up pastry and cut into 18-20 pieces. *Make sure when you are cutting each piece, it’s thick enough to hold the stuff inside.
Place pinwheel slices on 2 baking sheets with parchment paper.
Brush tops with egg wash.
Bake 15 mins or until golden brown.
Cool before plating.

Tips:
For muenster cheese it is best to buy it at the deli in a 1/4lb block and grate it yourself. You can also use mozzarella or try gouda, cheddar etc.
If you don’t have shredded parmesan, you can use grated.
Make sure you squeeze out the water from your spinach to avoid having a soggy pastry.
Not a spinach fan? Leave it out! Add a little more bacon and cheese.
Vegetarian? Omit the bacon.
