Banana Dark Chocolate Mini Loaves

- 3/4 cup unsalted butter (at room temperature) * 1 1/2 sticks - 1 1/2 cups sugar - 2 eggs - 1 1/3 tablespoons milk - 3 ripened bananas - 2 cups flour - 1 teaspoon baking soda - 1 cup dark chocolate chips


1. Preheat oven to 350 degrees 2. In a large bowl, combine the sugar and the butter. Mix on low. 3. Add eggs and blend. 4. Add milk and the bananas and mix for about 1 minute. 5. Add flour and baking soda and mix until blended. Fold in the chocolate chips. 6. Spray mini loaf pan (or 2 regular loaf pans) with non-cook spray. 7. Bake for 25 minutes in mini loaf pan or until knife or toothpick comes out clean. If using regular loaf pans it will take about 45 mins. 8. Remove from the oven and let cool on a wire rack for about 30 - 45 minutes. 9. Remove from pan and serve.

Note: - Nuts are a great add in. - This makes about 12 mini loafs. Make sure you only fill 3/4 of the way on the mini loaves. This gives them space to rise.
