Banh Mi Burger

Ingredients:

Burger Mix

1 Lb - Ground Pork

1/4 Cup - Fresh Basil (or 2 TBSP dried)

1 TBSP - Minced Garlic

3 - Scallions, finely chopped

1 TBSP - Fish Sauce

1 TBSP - Sriracha

1 TBSP - Sugar

2 Tsp - Cornstarch 1 Tsp each - Salt & Pepper

Sesame Oil

Sriracha Mayo

1 Cup - Mayo

1 - Scallion, finely chopped

2 TBSP - Sriracha


Toppings, optional

Jalapenos

Cilantro

Pickled Carrots (see below for recipe)


Preparation:

Heat grill on medium high

Mix all ingredients of your pork burger and form into 4 patties. Place on clean plate. Grill about 5 mins per side. Make sure temp is 160 before removing from grill.

While your burgers are grilling, mix all your mayo ingredients.

Assemble burgers on buns with mayo and additional toppings (see below)

Serve and enjoy!


Tips:

If you don’t like spicy food, you can cut the sriracha in half.

You can use any burger buns you want. Whole wheat sesame or Brioche buns are a great options.

If you don’t have a grill, cook your burgers on the stove. Use some sesame oil in the pan and cook on both sides making sure the temp is 160.


Quick Pickled Carrots

Add 1/2 cup rice vinegar, 1/2 cup white vinegar, 1 cup water, 1/4 cup sugar, 1 tsp salt to a saucepan. Add 2 cups of ribbon or shredded carrots (you can use a veggie peeler to make the ribbons) to a mason jars or glass bowl. Heat ingredients on medium until boiled. Once boiled and salt/sugar is dissolved, pour mixture over carrots until covered. Cool at room temp.
