Beef Barley Stew


Ingredients:

  • 3 Lbs - Stew Meat

  • 2 Each - Onions

  • 6 Cloves -Garlic

  • 2 Tsp. - Sage

  • 32 Oz. - Beef Broth

  • 1 Cup - Water

  • 2 Each - Sweet Potatoes

  • 1 Cup - Quick Cook Barley

  • 2 TBSP - Canola or Vegetable Oil

  • Salt & Pepper

Preparation:

  1. Season beef with salt and pepper.

  2. Thinly slice onions and mince garlic.

  3. Peel sweet potatoes and cut into 1" chunks.

  4. Heat oil in a large pot over medium high heat.

  5. Cook beef until browned on all sides. Remove from pot.

  6. Add onions and garlic. Cook until softened, about 8 minutes.

  7. Sprinkle with sage, and salt and pepper to taste.

  8. Add a little water and stir to scrape up all bits from the bottom.

  9. Add rest of water, broth, and sweet potatoes.

  10. Bring to a boil, then reduce heat to medium-low, cover and cook for 1 hour.

  11. Add barley and cook for 8-10 minutes.

  12. Serve and enjoy!

Tips:

  • If using regular barley instead of quick cooking, add at the same time you add the broth and sweet potatoes.

  • You can use a more inexpensive meat, such as a chuck roast, just be sure to remove all visible fat before cooking.

  • You may need to cook beef in batches allowing it to brown evenly. Be sure to add more oil as needed.

  • Get creative! Add in extra veggies such as peas, string beans, or corn! If frozen, be sure to thaw first and drain any excess liquid.
