Beef Soboro


Ingredients:

  • 1 Lb - Ground Beef

  • 1 TBSP - Fresh Grated Ginger

  • 4 TBSP - Soy Sauce

  • 3 TBSP - Mirin

  • 3 TBSP - Sake

  • 3 TBSP - Sugar

  • 1 Each - Scallion

  • Poached Eggs (see notes)

  • Cooked Rice

Preparation:

  1. Cook ground beef in a large sauté pan over medium high heat, breaking it up into small crumbles.

  2. Meanwhile, mix together, grated ginger, soy sauce, mirin, sake, and sugar in a small bowl.

  3. Once meat is browned, add the remaining mixed ingredients and stir to combine.

  4. Continue cooking until most of the liquid is absorbed and has slightly thickened.

  5. Place mixture over rice and top with poached egg and diced scallions.

  6. Serve and enjoy!

Tips:

  • A quick and easy way to poach your eggs is to crack the egg into a bowl filled with 1/ cup of water and microwave for about 70 seconds.

  • If you don't want to buy sake, use an additional tablespoon each of the mirin and soy sauce.

  • Get creative! Place leftover meat mixture in a pan, add raw eggs and cook until scrambled for a quick and easy breakfast!
