Beer Battered Fish



Ingredients:

  • 1.5 lbs cod

  • 1 cup flour

  • 1 egg

  • 1 tsp paprika

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1 tsp garlic powder

  • 1-2 tsp Tony Chachere creole seasoning or seasoned salt

  • 6 oz beer (1/2 a can)

  • Canola/Vegetable oil for frying *or a high smoke oil

  • 1 juice of a lemon, for topping

  • Tartar sauce, enjoy on the side

  • Malt vinegar, enjoy on the side

Preparation:

  1. Using a sauce pan or pot, add oil to about 3/4th of the way up. Heat oil to 350 degrees. *You can use a thermometer to temp the oil and the fish.

  2. Cut cod into 5-7 pieces.

  3. Season each piece of cod with creole seasoning or salt on both sides. Set aside.

  4. Combine flour and egg. Stir to combine.

  5. Add paprika, salt, pepper, garlic powder. Stir to combine.

  6. Add beer and stir to combine. *Batter should be thick- If it isn’t, add more flour.

  7. Dip each seasoned piece of fish in batter, completely coat.

  8. Add battered fish into hot oil.

  9. Cook fish until internal temp reaches 145 degrees.

  10. Remove from oil and place on a rack or a plate with paper towels.

  11. Once you place fish on plate, Top with lemon juice with a side of tartar sauce and malt vinegar.

  12. Enjoy!

Tips:

  • If you don’t have cod, you can use any white fish.

  • Serve with a side of roasted asparagus and top that with lemon juice.

  • If you are trying to cut down on salt, you can exclude the salt to the batter. It is more important to season your fish first and foremost.
