Buffalo Chicken Nachos/Tater Tots

- 2 chicken breasts - 1/2 cup cheddar cheese - 4oz cream cheese, cubed - 1 tbsp butter - 1/2 cup Franks red hot sauce - 2 carrots - 2 tbsp red onion - 2 tbsp celery - Ranch dressing to top - Salt and Pepper to taste - candied jalapeños to top - chips or tater tots


1. Preheat oven to 425. Cook tater tots according to package. 2. Fill small pot with water and a pinch of salt. Bring to a boil. 3. Put chicken breast and cook for about 10 mins until chicken reaches 165 degrees. 4. Meanwhile, cut up your veggies and put aside. 5. Heat a sauté pan on medium high and add butter. 6. Once butter is melted, add veggies and salt/pepper and cook until done about 4-5 mins. 7. Turn heat to medium low and add cream cheese. Mix until melted. 8. Add franks, cheddar cheese and mix. 9. Stir to combine turn heat to low. 10. Remove chicken from water and shred using 2 forks. Add to pan. 11. Top your chicken or chips with buffalo chicken mixture. Sprinkle a little more cheese on top. 12. Place back in the oven under the broiler for about 5 mins. 13. Plate the tots or chips first and then the buffalo chicken. 14. Drizzle ranch, some more Franks and diced jalapeños on top. 15. Enjoy!


Notes/Quick Tips:

- you can top this on anything really! Salad, corn or flour tortillas, fries etc.

- top with blue cheese and green onions

- go vegetarian, use cauliflower instead of chicken!
