Ingredients:
For Pork:
1lb ground pork
3 tbsp sugar
2 tbsp sesame oil
1 tbsp fish sauce
1 tbsp soy sauce
1 tsp salt
2 tsp pepper
2 tsp garlic, minced
For Sauce:
1 1/2 cup water
1/4 cup rice vinegar (or apple cider vinegar)
1 1/2 tbsp fish sauce
3 tbsp sugar
2 tsp garlic, minced
1/2 tsp salt
1/4 tsp red pepper flakes (optional)
For Noodle Bowl:
10 oz rice thin vermicelli noodles
4 cups romaine lettuce
1 to 2 large carrots, shredded
Half a large cucumber, sliced
Cilantro, chopped
Lime wedges, optional
Mint, optional
Preparation:
In a large sauce pan, heat 1 tbsp sesame oil on medium high heat and add pork.
Cook until no longer pink.
Add all pork ingredients and cook until pork is caramelized. Set aside.
Boil water in medium sauce pan and cook noodles according to directions.
Once noodles are done, strain and place in cool water until room temp.
In a small sauce pan, add all sauce ingredients on medium heat. Cook until sugar and salt is dissolved and set aside.
Prepare bowls- Divide into 4 bowls.
Place noodles first and top with carmilzed pork and veggies. Pour desired sauce over bowl and enjoy!
Tips:
Add peanuts to give your bowl a nice crunch
Add bean sprouts as well
If you don’t like pork, try this with ground chicken, turkey or beef.
