Cauliflower Steaks w/ Lentils


Ingredients:


For Cauliflower:

  • 1 Each - Head of Cauliflower

  • 2 TBS - Olive Oil

  • Salt & Pepper, to taste

For Lentils:

  • 3/4 Cup - Dried Lentils

  • 1-1/2 Cups - Water

  • 2 TBS - Soy Sauce, divided

  • 1 TBS - Olive Oil

  • 1 Each - Shallot, minced

  • 2 Each - Garlic Cloves, minced

  • 1 Tsp - Paprika

  • 1 Tsp - Apple Cider Vinegar

  • 1 Tsp - Honey

  • Salt & Pepper, to taste

Preparation:

  1. Preheat oven to 450º.

  2. Place cauliflower stem side down and cut 2 1" thick slices from the center so each side is flat (save the remaining cauliflower for another time).

  3. Place on parchment lined baking sheet and rub each side with the olive oil and season with salt and pepper to taste.

  4. Roast for a total of 30 minutes or until golden brown, flipping halfway through.

  5. Meanwhile, prepare the lentils by heating olive oil in your instant pot or pressure cooker.

  6. Add minced shallots and garlic and cook for 1-2 minutes until fragrant.

  7. Add water, lentils, paprika, and 1 TBSP of soy sauce.

  8. Stir to combine, then seal the lid and set the timer for 20 minutes.

  9. Once finished, release the pressure, then add in remaining soy sauce, apple cider vinegar, and honey.

  10. Season with salt and pepper to taste.

  11. Serve and enjoy!

Tips:

  • Go soy free by using coconut aminos in place of soy sauce.

  • Get creative! Break up the remaining cauliflower, season with olive oil, salt and pepper, and roast it with the cauliflower steaks. Use it in omelettes or as a side dish for another meal.
