Chicken Spaghetti

Ingredients:

  • 2lbs chicken cut in to small pieces

  • Salt & pepper to taste

  • 1 tbsp Italian seasoning

  • 2 tbsp olive oil

  • 4 tbsp butter

  • 1 onion, diced

  • 3 tsp garlic, minced

  • 4 tbsp flour

  • 1 1/2 cups chicken broth

  • 3/4 cup milk

  • 4 oz cream cheese, softened

  • 1 cup cheddar cheese, shredded

  • 1- 14oz can petite diced tomatoes

  • 1- 4oz can green chilies

  • 1 tsp paprika

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • Salt and pepper to taste

  • 1 tbsp Italian seasoning

  • 1lb thin or angel hair spaghetti cooked, according to package

  • 1 cup mozzarella cheese, shredded

Preparation:

  1. Preheat oven to 400 degrees

  2. In a small bowl, add chicken pieces, salt and Italian seasonings and mix.

  3. In large skillet, heat oil over medium high heat and cook until no pink is showing, place in bowl and set aside.

  4. Using the same skillet, melt butter over medium low heat then add onions and garlic.

  5. Cook until onions are translucent about 3-5 mins.

  6. Sprinkle flour and toss to coat. Stirring for a few minutes.

  7. Slowly add chicken broth and stir to combine. Then add milk.

  8. Turn heat to low and stir. Add cream cheese stir to combine.

  9. Add cheddar cheese and stir to combine.

  10. Add tomatoes and green chilies and stir to combine. Add seasonings then chicken.

  11. Combine sauce and pasta.

  12. In a greased 9 x 13 dish, add chicken spaghetti and spread evenly. Top with mozzarella cheese.

  13. Bake in oven 15-30 mins or until cheese is melted and bubbly. *You can also turn on the broiler for the last 5 mins. *watch closely so it doesn’t burn.

  14. Enjoy!

Tips:

  • Add parsley, green onion or red pepper for some added flavor.

  • Don’t have spaghetti, try this with any pasta!
