Chicken & White Bean Salad


Ingredients:

  • 1 Can - Great Northern Beans (also called White Kidney or Cannelini)

  • 1/2 Each - Red Onion

  • 1/4 Cup - Roasted Red Peppers

  • 1/4 Cup - Feta Cheese

  • 1-1/2 Cups - Cooked Chicken

  • 1/2 Each - Orange, plus zest

  • 1 TBSP - Apple Cider Vinegar

  • 1 TBSP - Olive Oil

  • Salt and Pepper

Preparation:

  1. Begin by making your dressing. Place 2 teaspoons of orange zest plus juice from 1/2 the orange into a mason jar. Add the apple cider vinegar, olive oil, salt and pepper. Close jar and shake vigorously to combine. Taste and adjust as needed.

  2. Drain and rinse beans.

  3. Dice onion, peppers, and chicken into bite size pieces.

  4. Place beans, onions, peppers, chicken and feta cheese in a large bowl.

  5. Add dressing and mix to combine.

  6. Serve and enjoy!


Tips:

  • Make some extra dressing and serve over a bed of arugula.

  • Add some pine nuts or chopped walnuts for another level of texture.

  • Get creative! Use store bought rotisserie chicken or even shrimp!
