Chipotle Salmon Burgers with Mango Salsa


Ingredients:

  • 1 LB - Salmon

  • 2 TBSP - Chipotle Peppers in Adobo Sauce

  • 1-1/2 TBSP - Wholegrain Mustard

  • 1 Each - Lime

  • 1/2 Tsp - Salt

  • 1/4 Tsp - Pepper

  • 3 TBSP - Olive Oil

  • 1/2 Cup - Mango Salsa

Preparation:

  1. Combine salmon, chipotle peppers, mustard, salt and pepper in a food processor.

  2. Add the zest of the entire lime and juice of half the lime.

  3. Pulse until combined. Divide into 3 patties.

  4. Heat olive oil in a pan over medium high heat and cook burgers about 3-4 minutes per side until golden brown.

  5. Top with mango salsa.

  6. Serve and enjoy!

Tips:

  • Chipotles add quite a bit of heat so adjust the amount to your liking.

  • No food processor? Finely chop ingredients and mix together in a bowl.

  • Get creative! Use leftover burgers to top a salad of mixed greens and veggies!
