Ingredients:
1/2 Cup - Fresh Pomegranate Seeds
1/2 Cup - Almonds
1 Cup - Dark Chocolate Chips
Flaky Salt (optional)
Preparation:
Roughly chop almonds. Set aside.
Melt chocolate chips.
Carefully stir in almonds and pomegranate seeds to melted chocolate (see below).
Drop tablespoon sized servings onto a parchment paper lined baking sheet.
Sprinkle lightly with flaky salt if desired.
Place in refrigerator until firm.
Serve and enjoy!
Tips:
Although fairly simple, if you're not up to the task of seeding a pomegranate, many stores carry the seeds already packaged. Look in the refrigerated section.
To melt chips on the stove, bring a small pot with water to a heavy simmer. Remove from heat and place a metal or glass bowl over the pot being sure it doesn't touch the water. Add in 2/3 of the chips and stir until melted. Add in the remaining chips and continue stirring until completely melted.
To melt chips in the microwave, place chips in a microwave safe bowl (non-plastic is best). Cook on high 1 to 1-1/2 minutes. Remove and stir. Continue cooking at 15-30 second intervals until melted. Don't be fooled if the chips don't look melted; they will keep their shape until stirred.
Get creative! Try making these with white chocolate instead of dark. Use pistachios in place of almonds. Instead of pomegranate seeds, use dried cranberries. The combinations are endless!
