Cinnamon Streusel Coffee Cake


Ingredients:


For Cake:

  • 1 Stick - Butter, softened

  • 3/4 Cup - Sugar

  • 1 Tsp - Vanilla

  • 1 Each - Egg

  • 2 Cups - Flour

  • 2 Tsp - Baking Powder

  • 3/4 Cup - Canned Coconut Milk

For Filling:

  • 1/2 Cup - Flour

  • 1/2 Cup - Brown Sugar

  • 1 TBSP - Ground Cinnamon

  • 3 TBSP - Butter, softened

For Topping:

  • 3/4 Cup - Flour

  • 1/2 Cup - Brown Sugar

  • 1 TBSP - Cinnamon

  • 5 TBSP - Butter, softened

Preparation:

  1. Preheat oven to 350º.

  2. Begin by preparing the cake.

  3. In a bowl, mix together flour, baking powder, and salt. Set aside.

  4. Using a stand mixer, cream together butter and sugar, then add egg and vanilla and continuing mixing until everything is incorporated.

  5. Add half of the flour mixture to the butter and sugar and mix until combined.

  6. Add the milk and mix. Add the remaining flour and mix until you have a batter.

  7. Make the filling by combining the filling ingredients cutting in the butter until evenly distributed and crumbly.

  8. Do the same in a separate bowl for the topping.

  9. Lightly spray an 8x8 pan with butter flavor cooking spray.

  10. Place half the batter in the pan in an even layer.

  11. Add the filling, then add the second half of the batter.

  12. Cover the top with the topping mixture.

  13. Bake about an hour or until a toothpick inserted in the center comes out clean.

  14. Let cool for about 10 minutes.

  15. Serve and enjoy!

Tips:

  • I love using canned coconut milk. It gives a nice creaminess and doesn't make your dishes taste like coconut but you may use any other kind of milk you like.

  • Make sure your butter is softened by leaving it out on the counter for about an hour. Forgot to take it out of the fridge before baking? Just place your sticks on the stovetop when preheating your oven.

  • Get creative! Try baking this in a round cake pan or even make muffins! Just be sure to adjust your cooking times accordingly.
