Corn Muffin Bites

Ingredients:

  • 1 Box - Jiffy Cornmeal Muffin Mix

  • 1 - Egg

  • ½ - Cup Milk

  • Cooking Spray

  • Additions (see tips)

Preparation:

  1. Combine mix, egg, and milk in a large bowl..

  2. Spray molds with cooking spray.

  3. Add any additions to bottom of molds.

  4. Fill molds no more than ⅔ full with mixture.

  5. Cover mold tightly with tin foil.

  6. Add 1 - 1-½ cups of water to bottom of pressure cooker.

  7. Place mold on top of a trivet.

  8. Seal lid making sure release valve is in the closed position.

  9. Set timer for 10 minutes.

  10. Manually release pressure when timer beeps.

  11. Carefully remove mold from pot and uncover.

  12. Serve and enjoy!

Tips:

  • Be sure to read your user manual for your pressure cooker. Steam is very hot and can cause severe burns.

  • If layering more than one mold, rotate each one a bit so the cups aren’t directly over the one below.

  • Test to make sure your muffins are done by inserting a toothpick. If it’s still wet in the middle, return to cook for just another minute.

  • Don’t overfill molds or add too many extra ingredients.

  • Get creative! Add extras such as blueberries for a sweet muffin, or shredded cheese and pre-cooked bacon for a savory muffin.
