Ingredients:
3-5lbs chuck roast
1 pkt onion soup
1 pkt ranch dressing mix
1/2 cup peperoncini, sliced *or you can use 4-5 whole peperoncinis
1 stick butter, salted
1 tbsp olive oil
Preparation:
Heat large pan on medium high. Add oil.
Brown chuck roast on each side. *Only a few minutes on each side
Place chuck roast in crockpot and add all ingredients.
Put crockpot on low for 6-8hrs. Check pot roast to make sure beef shreds.
Enjoy on top of mashed potatoes.
Tips:
You could make this in the pressure cooker. I would suggest doing it in the crockpot though. I have learned that meat is best slow cooked in order to shred the way you want.
To make this easier, you can skip the searing. You don't have to sear the beef if you don't want to. It will still taste great either way!
If you don’t have onion mix, you can use Au Jus packet.
If you don’t like peperoncini, you can use other peppers, whatever you prefer.
