Egg Roll in a Bowl

Ingredients:

  • 1 lb. - Ground Meat (see tips)

  • 1 lb. Bag - Shredded Coleslaw Mix

  • ½ Cup - Water or Broth

  • 1 TBSP - Soy Sauce

  • 1 TBSP - Garlic Powder

  • 1 TBSP - Ground Ginger

  • Salt

  • Pepper

  • Wonton chips for serving (optional, see tips)

Preparation:

  1. Brown meat in pot using saute or brown feature adding in seasonings while cooking.

  2. Once meat is completely cooked, turn unit off.

  3. Add broth, then top with coleslaw mix. Do NOT stir.

  4. Close unit and set timer for 1 minute.

  5. When finished, manually release pressure.

  6. Stir to combine.

  7. Serve and enjoy!

Tips:

  • We like ground pork, but feel free to use any ground meat you prefer. If using meat with a higher fat content, you may need to drain before adding broth and coleslaw mix as to not have excess grease in your finished dish.

  • Be careful not to oversalt your dish. I also do not add any additional soy sauce during the cooking process and it can become oversalty. Feel free to add to your finished product if needed.

  • To make wonton chips, cut wonton or eggroll wrappers into rectangles or triangles. Brush lightly with oil and place on a baking sheet in a 400º oven until browned. Do not turn your back as these can burn quickly. Feeling adventurous? Make your own homemade wonton dough using a pasta machine for super thin sheets.

  • Get creative! Use fresh cabbage and carrots, add in raw shrimp to the cooked meat prior to adding broth and coleslaw mix, or leave out the meat and double the remaining ingredients to make a vegetarian version.
