Eggs Benedict Breakfast Casserole



Ingredients:

  • 3 large croissants, ripped into pieces

  • 10 eggs

  • 2 1/4 cups milk

  • 1 tsp salt

  • 1/2 tsp pepper

  • 1 tsp oregano or Italian seasoning

  • 1 tsp paprika

  • 1 cup ham, chopped into small pieces

  • 1/2 cup bacon, cooked and chopped into pieces

  • Green onion, finely chopped for topping

  • Hollandaise sauce for topping * https://www.cookingcousins.com/post/poached-eggs-with-hollandaise

Preparation:

  1. Preheat oven to 350 degrees.

  2. Place croissant pieces on sheet pan and toast in oven for 5-10 mins.

  3. In a large bowl, combine eggs, milk and seasonings. Whisk thoroughly. Set aside.

  4. Spray or butter a 9 x 13 pan and place toasted croissant pieces in the bottom.

  5. Top with ham and bacon.

  6. Pour egg mixture over the top. Slightly shake pan back and forth to insure the egg mixture covers everything.

  7. Place into oven for 30 mins and up to an hour until middle comes out clean and casserole is solid (no jiggle in the middle) *Check in 10 min increments after your 30 mins. Depends on how hot your oven gets etc.

  8. Remove from oven and top with hollandaise sauce and green onions.

  9. Enjoy!

Tips:

  • If you don’t have croissants, you can use English muffins or even French bread.

  • If you don’t want to make hollandaise sauce yourself, you can use the pre-made packs from the grocery store.

  • You can always add a few veggies to this. I was try it with chopped up asparagus!
