Fried Green Tomatoes


Ingredients:

  • 2 Each - Large Green Tomatoes

  • 1 TBSP - Salt

  • 1/2 Cup - Flour

  • 2 Each - Eggs

  • 4 TBSP - Cornmeal

  • 4 TBSP - Italian Style Breadcrumbs

  • 1/4 Tsp - Paprika

  • 1/4 Tsp - Salt

  • 1/8 Tsp - Cayenne pepper, optional or more to taste

  • Cooking spray (olive oil or butter)

Preparation:

  1. Slice tomatoes into 1/4" slices and place on a cutting board or baking sheet in a single layer.

  2. Coat with salt and let sit for 5 minutes to draw out some moisture.

  3. Meanwhile, in a small bowl, whisk eggs and set aside.

  4. In a shallow bowl or on a plate, mix together the cornmeal, breadcrumbs, paprika, 1/2 tsp. of salt, and cayenne pepper.

  5. Place flour in yet another shallow bowl or plate.

  6. After tomatoes have sat for 5 minutes, take a paper towel and blot dry.

  7. Dip the tomato slices first in flour, then in egg, then in the breadcrumb mixture.

  8. Heat airfryer to 390º (see below for additional cooking methods).

  9. Once heated, place tomato slices in a single layer (you may need to do more than one batch).

  10. Spray with a bit of cooking spray and cook for about 9-10 minutes until golden brown, flipping halfway through (be sure to spray again after flipping).

  11. Serve and enjoy!

Tips:

  • It is important to pat the tomatoes dry to remove the excess moisture and have the coatings properly stick.

  • If you don't have an air fryer, bake in a 400º oven instead (cooking times may need to be adjusted) or fry in a large skillet over medium heat on the stovetop.

  • Get creative! Serve with a dollop of greek yogurt or your favorite dipping sauce. This dish can be served as a side or even as a complete meal over a bed of greens or some homestyle grits!
