Frittata

Ingredients:

  • 8-10 - Eggs

  • Any leftover veggies or meats

  • Your favorite cheese

  • Seasonings to taste

Preparation:

  1. Saute uncooked veggies in a little butter and olive oil until cooked. If using leftover cooked veggies, place in a little bit of olive oil over medium heat.

  2. Add beaten eggs to pan, stirring until eggs start to set. Cover.

  3. Once eggs start to firm up, add meat and cheese. Cover until eggs are completely set.

  4. Remove from heat.

  5. Serve and enjoy!

Tips:

  • Place all items in baking dish and cook at 350º until eggs mixture is fully cooked and firm all the way through.

  • Be sure your pan is thoroughly coated to prevent sticking.

  • Get creative! Use leftover chicken and rice, topping with salsa for a quick mexican egg dish. Mushrooms, spinach, ground meat, and feta are great together. Find what’s in your fridge and create your own unique combination!
