Gingerbread Granola


Ingredients:

  • 4 Cups - Old Fashioned Rolled Oats

  • 2 Cups - Sweetened Shredded Coconut

  • 1 Cup - Slivered or Sliced Almonds

  • 2 Tsp - Ground Ginger

  • 1-1/2 Tsp - Ground Cinnamon

  • 1 Tsp - Ground Nutmeg

  • 1/2 Tsp - Salt

  • 1/8 Tsp - Ground Cloves

  • 2/3 Cup - Coconut Oil

  • 1/4 Cup + 2 TBSP - Pure Maple Syrup

  • 3 TBSP - Molasses

  • 1 Tsp - Vanilla Extract

  • 1 Cup - Pistachios

  • 1 Cup - Craisins or Dried Cranberries

  • 1 Cup - White Chocolate Chips

Preparation:

  1. Melt coconut oil in microwave and set aside to cool

  2. Preheat oven to 350º and line a rimmed baking sheet with parchment paper.

  3. Mix together oats, shredded coconut, almonds, and all ground spices and salt.

  4. Pour cooled coconut oil over mixture and stir to combine.

  5. Mix together syrup, molasses, and extract, then pour over mixture and stir until everything is evenly coated and incorporated.

  6. Spread mix in even layer on baking sheet and place in oven for 10 minutes.

  7. Remove, stir, place back in oven for another 10 mins. Remove from oven, stir again, then place in oven at 2-3 minute increments until golden brown. Watch carefully as mixture can quickly burn.

  8. Once done, remove from oven and leave in pan until fully cooled.

  9. Pour mix into a large bowl and add pistachios, cranberries, and chips.

  10. Place in airtight container and enjoy!


Tips:

  • Use honey or additional syrup in equal measurements as replacement for molasses (may give a slightly different taste).

  • Get creative! Add any combination of nuts, dried berries, or chips.
