1/2 cup olive oil
1 large onion, diced
7 cloves of garlic, diced
1 12oz can of tomato paste
4 28oz can of whole peeled plum tomatoes
1/4 cup basil
1/4 cup oregano
1/4 cup parsley
Salt & pepper to taste
Heat oil in a large stock pot.
Add onions and cook for 5 mins until translucent.
While onions are cooking, blend the whole tomatoes in 2 batches.
Add garlic to the pot and cook for 2 mins.
Add tomato paste and seasonings and mix. Cook for a minute or two and stir.
Add blended tomatoes to pot and stir.
Simmer for at least an hour.
Notes/Quick Tips:
This is a big pot of sauce, if you want to make less just half the recipe.
If you don’t have whole peeled tomato cans, you can use diced or stewed. You could even use tomato sauce.
