Grandma's Sausage & Peppers

- 1lb hot or sweet Italian sausage - 1 onion - 3 peppers (any color works) - 5 hard rolls - 3 potatoes (any type works) - 2 tbsps olive oil - 1 tsp Garlic powder - 1 tsp Onion powder - 1 tsp Italian herb seasoning - 1 tsp Salt - 1/2 tsp Pepper

- Salt & Pepper to taste, for onions and peppers


1. Preheat oven to 350 2. Dice up potatoes into cubes (about 1 inch cubes) 3. Using a cookie sheet, place diced potatoes on pan and drizzle with oil. 4. Mix oil with potatoes. Add seasonings and mix again. 5. Place your sausage links throughout the cookie sheet among the potatoes. Poke each sausage with a knife or fork. 6. Place sausage and potatoes in the oven for about 30 to 45 mins or until sausage is cooked completely. 7. While sausage/potatoes are cooking, slice up the peppers and onion in to small strips. 8. Put oil in pan and heat on medium high. 9. When heated, add peppers and heat for 3 mins before adding onions. Add salt & pepper to taste. 10. Cook until veggies are crisp but soft and onions are translucent (aka see through). Turn heat off and leave until ready to use. 11. Check your sausage and potatoes at about 30 mins. Internal temp should be 160. 12. Place hard rolls in the oven for a few minutes to get crispy and warm. 13. Use a platter to plate your food. 14. Build sandwich- Place peppers first then sausage enjoy with potatoes on the side.

Notes/Quick Tips: - You can enjoy this on top pasta or just by its self. - Everyone’s ovens are different. Keep an eye out after 30/45 to check on your food. - Turkey Italian sausage is great with this too. Healthy alternative!
