Meatballs
1 lb ground chicken or ground turkey
2 tsp garlic, minced
1/4 cup fresh parsley, chopped
2 tsp Italian seasoning
1 tsp salt
1 tsp pepper
1 tbsp olive oil
1 large egg
1/4 cup panko bread crumbs *or you can use any bread crumbs you have available
3/4 cup crumbled feta
Tzatziki
1 cup greek yogurt, plain
2 tbsp green scallions, chopped finely
1 tsp garlic, minced
1 tbsp lime juice
1/2 medium cucumber w/skin, grated and squeezed for excesses water *you can use a towel or your hands to do so.
Salt & pepper to taste
Preheat oven to 350 degrees.
In a large bowl, add all meatball ingredients and mix thoroughly.
Take about 2-3 tbsps of meatball mixture and roll into a ball. Continue till all meatballs are formed.
Heat an oven safe large pan or cast iron on medium high heat and add oil. *just enough to coat the bottom of the pan to brown the meatballs.
You will have to work 1-2 batches to get all meatballs browned on both sides.
Once all your meatballs are browned, put back together in pan and place in oven for 5-10 mins or until internal temp reaches 160 degrees.
While your meatballs are cooking, in a small bowl add your tzatziki ingredients and set aside.
Serve tzatziki sauce with meatballs and a side of rice and veggies.
Notes/Quick tips:
- Stand up graters work best to grate the cucumber.
These meatballs are amazing!!! I've made them twice already. Once with regular breadcrumbs and the other with panko and they were amazing both times. The taziki sauce was awesome too. I served them with brown Jasmine rice that I cooked with chicken broth and salad. I followed the recipe exactly as written. There is no need to change anything!! This is going to be a regular now. I'm so glad I found this website!!! ❤
