Grilled Steak & Corn Salad with Balsamic Vinaigrette



Steak Marinade- Marinade for at least 30 mins.

  • 2lb sirloin steak

  • 1/4 cup balsamic vinegar

  • 2 tbsps Worcestershire sauce

  • 1/2 cup olive oil

  • 2 tsp honey mustard or dijon mustard

  • 1/2 tsp garlic powder

  • 1 tsp salt

  • 1/2 tsp pepper

Balsamic Vinaigrette

  • 6 tbsp balsamic vinegar

  • 1 cup olive oil

  • 1 tsp honey mustard or dijon mustard

  • 1/4 tsp salt

  • 1/4 tsp pepper

  • 2 tbsp basil leaves, fresh

  • 2 tbsp parsley, fresh

  • 1 tsp garlic, minced

  • 1/2 tbsp lemon zest

  • 1 tbsp lemon juice

Salad

  • 1 1/2 cup cherry tomatoes, halved

  • 1/2 red onion, thinly sliced

  • 4 oz gorgonzola cheese, crumbled

  • 3 corn on the cobs, husk removed

  • 1 large container of mixed spring greens

  • Olive oil spray for corn


  1. Using a large ziplock bag, put the steak in and add all marinade ingredients. Shake up to mix all ingredients throughly. Place in fridge for at least 30mins.

  2. Heat grill *I used charcoal but you can also use propane. Mine takes about 30 mins to get ready so that’s a good time to preheat your grill.

  3. Spray corn with olive oil and put aside until grill is ready.

  4. Using a small bowl or small jar with a top, combine vinaigrette mixture and whisk or shake to combine.

  5. Once grill is ready, put corn on grill and cook for about 10 mins until charred *or to your liking. Halfway through the corn cooking, place steak on the grill and cook for 4-5 mins each side for medium rare.

  6. Once corn is done, remove from grill and cut off kernels, set aside.

  7. Once steak is done, remove and let rest for 5 mins before slicing.

  8. Serve salad on individual plates- serves about 4. Place salad and top with remaining salad ingredients. Place sliced steak and vinaigrette on top and enjoy!


Notes/Quick Tips:


  • You can also use blue cheese instead of gorgonzola and even feta would work.

  • If you don’t have fresh herbs, you can use 1 tsp of the dried herbs.

  • Don’t eat steak? Try this with chicken! Just make sure your internal temp is at least 160 degrees.
