Ham & Pea Casserole


Ingredients:

  • 1 8-oz - Precooked Ham Slice

  • 1 Cup - Frozen Peas, thawed

  • 2 Cups - Cornbread

  • 5-6 Sprigs - Fresh Thyme

  • 2 Cups - Whole Milk

  • 3 Eggs, Plus 1 Yolk

  • Salt & Pepper

Preparation:

  1. Preheat oven to 350º and spray a 2-1/2 qt casserole dish lightly with cooking spray.

  2. Dice ham and cornbread and place in a bowls with peas and fresh thyme. Gently toss to avoid crumbling the cornbread.

  3. Place in casserole dish and evenly distribute ingredients.

  4. Beat together eggs, milk, and a pinch of salt.

  5. Evenly pour over ingredients in dish.

  6. Let stand for 15 minutes then bake in oven for about 45 minutes until just set.

  7. Let rest for about 10 minutes.

  8. Serve and enjoy!

Tips:

  • When pouring custard over cornbread mixture, some pieces will stick out. This is ok...do not submerge all pieces as you want some browning on top.

  • Don't overcook your eggs. You want the middle to be slightly jiggly (think Jello) when removing from oven as mixture will continue to cook some once removed.

  • Get creative! Use leftover chicken, add some broccoli or green beans, the possibilities are endless!
