Ingredients:
3 - Large boneless, skinless chicken breast
3 TBSP - Hummus
2 - Zucchini
2 - Yellow Squash
1 - Onion
1 - Red Pepper
1 - Yellow Pepper
1 TBSP - Italian Seasoning
2-3 TBSP - Olive Oil
1-2 TBSP - Balsamic Vinegar
Lemon
Salt
Pepper
Preparation:
Preheat oven to 450º.
Chop veggies into chunks and add to a 9x13 baking dish.
Coat veggies with olive oil, salt, pepper, and Italian seasoning.
Lay chicken on top of veggies and season with salt, pepper, Italian seasoning, and a drizzle of olive oil.
Top each piece of chicken with a TBSP of hummus, spreading evenly to cover.
Drizzle the entire dish with a balsamic vinegar, then squeeze juice from half a lemon over all.
Bake for 25-30 minutes until chicken is cooked through and veggies are tender.
Serve and enjoy!
Tips:
Don’t overcook your chicken! Meat will continue to cook when removed from the oven...just make sure it’s not “raw” when taking out. Let it sit for 10-15 minutes before cutting or you’ll lose all the deliciousness and moisture.
Get creative! There are soooo many different flavors of hummus these days. Try different ones and choose veggies you and your family like. Remember, a recipe is always created as a basic guideline for you to re-create and make your own.
