Hummus Chicken

Ingredients:

  • 3 - Large boneless, skinless chicken breast

  • 3 TBSP - Hummus

  • 2 - Zucchini

  • 2 - Yellow Squash

  • 1 - Onion

  • 1 - Red Pepper

  • 1 - Yellow Pepper

  • 1 TBSP - Italian Seasoning

  • 2-3 TBSP - Olive Oil

  • 1-2 TBSP - Balsamic Vinegar

  • Lemon

  • Salt

  • Pepper

Preparation:

  1. Preheat oven to 450º.

  2. Chop veggies into chunks and add to a 9x13 baking dish.

  3. Coat veggies with olive oil, salt, pepper, and Italian seasoning.

  4. Lay chicken on top of veggies and season with salt, pepper, Italian seasoning, and a drizzle of olive oil.

  5. Top each piece of chicken with a TBSP of hummus, spreading evenly to cover.

  6. Drizzle the entire dish with a balsamic vinegar, then squeeze juice from half a lemon over all.

  7. Bake for 25-30 minutes until chicken is cooked through and veggies are tender.

  8. Serve and enjoy!

Tips:

  • Don’t overcook your chicken! Meat will continue to cook when removed from the oven...just make sure it’s not “raw” when taking out. Let it sit for 10-15 minutes before cutting or you’ll lose all the deliciousness and moisture.

  • Get creative! There are soooo many different flavors of hummus these days. Try different ones and choose veggies you and your family like. Remember, a recipe is always created as a basic guideline for you to re-create and make your own.
