Irish Cottage Pie

  • 1 lb ground beef

  • 1 medium onion, diced

  • 2 large carrots, diced

  • 14oz can diced tomatoes

  • 3 tbsp tomato paste

  • 1 1/2 tbsp flour

  • 1/2 cup water

  • 1 tbsp olive oil

  • Salt & pepper to taste

  • 2 lbs potatoes, cooked *I used russet potatoes but you could do gold or red potatoes as well

  • 1 egg yolk

  • 1 tbsp butter

  • 1/4 cup + more cream/milk depending on consistency of mashed potatoes

  1. Preheat oven to 350 degrees.

  2. Add oil to large pan and heat on medium high.

  3. Add onion and cook for 3 mins.

  4. Add ground beef and cook until no longer pink.

  5. Add flour and mix.

  6. Add carrots, diced tomatoes, paste, water and salt and pepper.

  7. Bring to a boil and turn down low for 15-20 mins.

  8. Meanwhile, add cooked potatoes, egg yolk, butter and cream/butter to make mashed potatoes, set aside *add salt for a little more flavor *I use a potato masher but you can also use a hand mixer as well.

  9. Pour meat mixture into sprayed casserole pan- 9x9 would work great.

  10. Top meat mixture with mashed potatoes and score with a fork.

  11. Place in oven and bake for 20-25 mins.

  12. Switch oven temp to broiler and cook for 2 mins to get a nice brown top to the dish.

Notes/Quick Tips:

  • This dish is close to what you would consider a shepherds pie. You could add peas if you would like or even corn. This recipe above is a legit Irish recipe and I wanted to make sure to honor that.

  • When adding the cream/milk to your potatoes, make sure you get a creamy consistency that can still stick to your spoon. Adding a little at a time, will help stay away from adding too much at once and accidentally having watery potatoes.
