Italian Sausage Soup


  • 1 lb Jennie O Turkey Italian Sausage Hot

  • 3 cloves of garlic, sliced

  • 4 carrots, peeled & sliced

  • 2 14.5oz cans of Italian style diced tomatoes

  • 2 14.5oz cans of great northern beans, rinsed and drained

  • 3 zucchini, diced

  • 1 bag of fresh spinach

  • 8 cups of beef broth (64 oz)

  • Drizzle of olive oil

  • Shredded Romano or Parmesan cheese for topping

  1. Drizzle olive oil in a dutch oven or stock pot and put pot on medium high.

  2. Squeeze the sausage out of the casings into the pot and cook until brown, no pink.

  3. Add garlic and stir.

  4. Add chopped carrots, diced tomatoes, beef broth and beans.

  5. Bring to a boil, then add zucchini.

  6. Cover and cook for 15 mins.

  7. Add your bag of spinach, cover once again and cook for 15 additional minutes.

  8. Top your soup with some shredded romano and enjoy!


Notes/Quick Tips:

  • You can use regular pork Italian sausage but make sure it’s not too greasy. If there is a lot of grease, you’ll need to drain it before adding the rest of the items. You might need to add some salt and pepper- taste first before adding.

  • Enjoy with some nice buttered crispy bread slices.
