Ingredients:
1 Lb - Ground Turkey
4 Each - Hard Boiled Eggs, peeled
1 Tsp - Garlic Powder
1 Tsp - Italian Seasoning
Pinch of Cayenne (optional)
1 Cup - Italian Seasoned Breadcrumbs
1/2 Cup - Cornstarch or Flour
1 Each - Egg, slightly beaten
Salt & Pepper, to taste
Preparation:
Preheat oven to 400º.
Mix together ground turkey, garlic powder, italian seasoning, and salt and pepper to taste.
Divide into 4 equal amounts then wrap each portion around 1 hard boiled egg, wrapping into an oval shape.
Dip the ball into the flour or cornstarch, then the egg, then roll in the breadcrumbs.
Place on a baking sheet and bake for 18-20 minutes or until meat is fully cooked.
Serve and enjoy!
Tips:
Substitute soft boiled eggs for the hard boiled for a slightly runny finish.
Taste test! Obviously you can't taste raw meat so an easy way to taste test your food for the proper seasoning is to cook a teaspoon portion of meat in a pan on the stove before cooking your final dish.
Get creative! Serve over a bed of mixed greens with tomatoes for a yummy lunch or dinner.
