Korean Street Toast

- Eggs - Scallion - Shredded Carrots - Shredded Cabbage - Bread - Deli Ham - Deli Cheese - Ketchup - Butter

1. Crack eggs into bowl and whisk. Add shredded carrots, cabbage, and scallions. Season with salt and pepper. 2. Melt some butter in a pan over medium heat. Add egg mixture cooking low and slow as to not burn the eggs and help prevent sticking. Flip and cook other side. 3. Add more butter to pan and a slice of bread. 4. Top with some “omelette”, ham, cheese and ketchup. Top with another piece of bread making a sandwich. 5. Cook until one side is nice and golden brown. Flip and cook other side until done. 6. Serve and enjoy! Notes/Quick Tips: - This recipe is a little difficult to write measurements. Think of one egg per person and add as much or as little of the other ingredients as you like. - Cutting the egg mixture before flipping helps so it doesn’t become a scramble. Try and keep in a square form by pushing in sides as it cooks so that it fits better on the bread. - I like to buy fresh cabbage and carrots and use a box grater to shred. This saves $$$. - Get creative! Add other veggies of choice to substitute the cabbage and carrots. You could also use turkey or roast beef instead of ham.
