Korean Style Sloppy Joes


Ingredients:

  • 1 Each - English Cucumber

  • 1/4 Cup - Rice Vinegar

  • 1 Tsp - Salt

  • 1/4 Tsp - Sugar

  • 1 Tsp - Toasted Sesame Oil

  • 1 Lb - Ground Beef or Turkey

  • 2 Tsp - Minced Garlic

  • 1 Each - 6 oz Can Tomato Paste

  • 3 TBSP - Soy Sauce

  • 1-2 TBSP - Sriracha

  • 1 TBSP - Brown Sugar

  • 1/4 Cup - Water

  • Juice from 1 Lime

  • 1 Each - Scallion

  • 4 - Brioche Buns

Preparation:

  1. Start by slicing cucumber into 1/4" rounds.

  2. Place in a bowl with rice vinegar, salt, and sugar.

  3. Set aside to marinade for 15-30 minutes, gently tossing every 10 minutes.

  4. Place sesame oil in a large skillet and heat over medium high heat.

  5. Add ground beef (or turkey) breaking apart into small pieces.

  6. About halfway through cooking, add garlic.

  7. Finish cooking, then remove from heat and drain fat.

  8. In a small bowl, mix together tomato paste, 1/4 cup of water, soy sauce, sriracha, and brown sugar.

  9. Pour mixture over meat mixture and stir to combine.

  10. Return to stove and bring to a simmer over medium low heat, stirring occasionally for about 10 minutes.

  11. Stir in lime juice and sliced scallions.

  12. Place on toasted buns with cucumbers.

  13. Serve and enjoy!

Tips:

  • Add a tablespoon of water as needed during simmering to reach desired consistency and prevent mixture from becoming to dry.

  • Adding the garlic halfway through browning the meat will help it not burn.

  • Get creative! Place in wonton wrappers and deep fry or air fry and serve with a dipping sauce on the side.
