Lazy Lasagna

Lazy Lasagna- Veggie Version


- 1 box of lasagna noodles - 2 8oz packages of fresh mozzarella cheese (or you could use 2 packs of shredded mozzarella cheese) - 1 quart of homemade sauce (or you could use a store bought jar of sauce) - 10 oz of ricotta cheese(you could also use provolone to layer with as well) - 2 Zucchinis sliced (long ways) - 4 oz or half a container of mushrooms sliced - 1 1/2 cups of parmesan cheese


1. Cook lasagna noodles al dente according to package. 2. While noodles are cooking, slice your zucchini and mushrooms. 3. Once noodles are finished, drain and layer noddles 3 one way and 3 the other way. Be sure to spray each layer with cooking spray of your choice. 4. Preheat oven to 375 degrees. 5. Layer your lasagna as so- sauce, noodles, veggies and cheese in a 9 x 13 greased pan. 6. Repeat until you have 2 full layers. Top off with noodles, sauce and cheese. 7. Place in oven and cook for 30 to 45 mins or until lasagna is bubbling and the cheese is melted.

Lazy Lasagna- Meat Version - 1 box of lasagna noodles - 2 8oz packages of fresh mozzarella cheese - 1 quart of homemade sauce - 10 oz of ricotta cheese - 1/2 pound of hot Italian sausage - 1/2 pound of ground turkey - 1 1/2 cups of parmesan cheese

1. Cook lasagna noodles al dente according to package. 2. While noodles are cooking, mix the ground turkey and hot Italian sausage (squeeze out of casing) in a skillet on medium high until thoroughly cooked. 3. Once noodles are finished, drain and layer noddles 3 one way and 3 the other way. Be sure to spray each layer with cooking spray of your choice. 4. Preheat oven to 375 degrees. 5. Layer your lasagna as so- sauce, noodles, meat and cheese in a 9 x 13 greased pan. 6. Repeat until you have 2 full layers. Top off with noodles, sauce and cheese. 7. Place in oven and cook for 30 to 45 mins or until lasagna is bubbling and the cheese is melted.

Notes: - You don't have to use fresh mozzarella, you can use the packages of already shredded mozzarella. The fresh mozzarella melts better so that's why I use it. - You don't have to use homemade sauce. Jarred sauce would work great as well. If you want to make homemade sauce, check out my live "Grandma's Sauce". It is easy and delicious! - You don't have to but ground meat in your lasagna. You could do meatballs or sausage slices. You could do pepperoni or no meat at all. -When doing a veggie lasagna, your added vegetables can add moisture to your dish. Thats ok! Your zucchini will be cooked perfectly- no need to cook before. You can add other veggies as well. Spinach is great too!
