Ingredients:
Meatloaf:
1 lb lean ground beef
2 eggs
1/4 cup milk
1 cup bread crumbs
1/2 onion, diced
1 tsp garlic powder
1 tsp onion powder
1 tsp oregano
1 tsp parsley
1 tsp salt
1 tsp pepper
4 strips bacon
Meatloaf Sauce:
1 cup ketchup
2 tsp white vinegar
3 tbsp brown sugar
1 1/2 tsp garlic powder
1 1/2 tsp onion powder
1 tsp ground mustard
1/2 tsp pepper
1/2 tsp salt
Preparation:
Preheat oven to 350 degrees.
Add all meatloaf ingredients to large bowl, and mix to incorporate.
In a loaf pan, place parchment paper or greased foil sheet. Add meatloaf mix then top with bacon slices.
Combine all meatloaf sauce ingredients in medium bowl.
Using 1/2 of the sauce, top the meatloaf.
Place in oven and cook for 30 mins
Remove from oven and top with the other 1/2 of the sauce.
Put back in oven for another 20 mins then put the broiler on for 5-10 mins to crisp up the top. *Internal temp should be 165 degrees.
Remove from oven and let set for 10 mins. *this is important to keep the juices in tact so that the meatloaf does not dry out.
Serve with mashed potatoes and Enjoy!
Tips:
If you love the sauce, make a little more and serve on the side.
If you don’t have lean ground beef, you can use 80% ground beef. You could also do ground turkey or a mix of both.
You can leave the bacon off if you don’t want that added.
