Manicotti



Ingredients:


For Three Cheese Version:

  • 1 pkg manicotti shells, cooked *according to directions

  • 3 cups shredded mozzarella cheese

  • 1 cup shredded mozzarella cheese, for topping

  • 2 cups ricotta cheese

  • 1 cup parmesan cheese + extra for topping

  • 1 tbsp garlic, minced

  • 1 large egg

  • 2 tbsp basil, fresh or 1 tbsp dried

For Spinach & Cheese Version:

  • 1 pkg manicotti shells, cooked *according to directions

  • 2 cups shredded mozzarella cheese

  • 1 cup shredded mozzarella cheese, for topping

  • 2 cups ricotta cheese

  • 1 cup parmesan cheese + extra for topping

  • 1 tbsp garlic, minced

  • 1 large egg

  • 2 tbsp basil, fresh or 1 tbsp dried

  • 16oz package of frozen spinach (be sure to heat spinach before adding to mixture)

Preparation:

  1. Preheat oven to 350 degrees.

  2. In a large bowl, mix all ingredients (minus cheese for topping)

  3. Take each cooked shell and stuff with mixture *make sure your shells have had time to cool after cooking so you can handle them without it being too hot.

  4. Using a 9 x 13 pan, grease and spread some sauce on the bottom just enough to cover it.

  5. Place each stuffed shell in pan lining them next to each other and in any space available after that.

  6. Top shells with sauce and then with mozzarella & parmesan

  7. Place in oven and cook for 30-45 mins or until bubbly.

  8. Enjoy!

Tips:

  • Add in your other favorite veggies too! You could add mushrooms, peppers etc.

  • You could add meat as well. Try chicken and artichoke version or you could do Italian sausage!

  • Stuffing the shells can be a little challenging. Sometimes they rip when you are stuffing them. I find using a plastic baggy and stuffing it to pip the mixture works best. You could also use a small spoon as well. Whatever you prefer. If they do rip, that’s ok! Stuff it anyways and put it in the pan. They will still be delicious and covered in sauce so you can’t go wrong!
