7 eggs, scrambled
1/2 large green pepper
1/4 cup cherry tomatoes, sliced lengthwise
1/4 large onion, diced
1/2 cup shredded cheese *Cheddar, Colby jack etc.
1 tsp Everything but the Elote Seasoning from Trader Joe’s *you can also use cumin & chili pepper
1/2 cup tortilla chips, broken up into pieces *or more if desired
Salt and pepper to taste
1 tbsp fresh cilantro, finely chopped
1 tbsp Olive Oil
Avocado for topping
Salsa for topping
Jalapeño for topping, if desired
Heat a large pan on medium high heat, add oil and sauté onion and peppers for 2-3 mins.
Add tomatoes and cook for an additional 2 mins.
Add seasonings and mix.
Add tortilla chips and a drizzle of oil and cook for 2 mins.
Turn heat down to medium and add eggs.
Cook until eggs are almost done, add cilantro and cheese.
Top eggs with salsa, avocado and jalapeño if desired
Notes/Quick Tips:
If you don’t have cherry tomatoes, any tomatoes would work.
I used tortilla chips because that is what I had available. Traditionally it is made with cut up fried corn tortillas. You can do that as well. Just fry the corn tortillas before you make the egg dish.
