Migas



  • 7 eggs, scrambled

  • 1/2 large green pepper

  • 1/4 cup cherry tomatoes, sliced lengthwise

  • 1/4 large onion, diced

  • 1/2 cup shredded cheese *Cheddar, Colby jack etc.

  • 1 tsp Everything but the Elote Seasoning from Trader Joe’s *you can also use cumin & chili pepper

  • 1/2 cup tortilla chips, broken up into pieces *or more if desired

  • Salt and pepper to taste

  • 1 tbsp fresh cilantro, finely chopped

  • 1 tbsp Olive Oil

  • Avocado for topping

  • Salsa for topping

  • Jalapeño for topping, if desired

  1. Heat a large pan on medium high heat, add oil and sauté onion and peppers for 2-3 mins.

  2. Add tomatoes and cook for an additional 2 mins.

  3. Add seasonings and mix.

  4. Add tortilla chips and a drizzle of oil and cook for 2 mins.

  5. Turn heat down to medium and add eggs.

  6. Cook until eggs are almost done, add cilantro and cheese.

  7. Top eggs with salsa, avocado and jalapeño if desired

Notes/Quick Tips:

  • If you don’t have cherry tomatoes, any tomatoes would work.

  • I used tortilla chips because that is what I had available. Traditionally it is made with cut up fried corn tortillas. You can do that as well. Just fry the corn tortillas before you make the egg dish.
