Mini Apple Pies



Ingredients:

  • 1 pkg pre-made dough *room temp

  • 1 granny smith apple

  • 1 pink lady or sweeter type apple such as ambrosia

  • 1 tsp cinnamon

  • 1/3 cup sugar

  • Pinch of salt

  • 2 tbsp water

  • 1 egg for egg wash

  • Turbinado sugar, for topping

Preparation:

  1. Remove skin and core from apples. Cut apples into small pieces and place in a large skillet.

  2. Heat skillet on medium low and add cinnamon, sugar and salt.

  3. Cook for about 10 mins then set aside to cool.

  4. While filling is cooling, remove pre-made dough from packaging.

  5. Flour a clean surface and roll out the dough using a rolling pin. *do not roll it out too thin- It needs to still have some substance to it.

  6. Using something round, such as a large mason jar lid or a medium plastic lid (I used a lid from a medium glass container), cut the dough into pieces. I was able to get 7 full pies (14 rounds).

  7. Start assembling the mini pies by taking 1 dough round and placing 1/4 cup of the mixture on top.

  8. Using the water, dip your finger and spread the water around the edge of the dough round. Top with another dough round and close edges.

  9. Using a fork, press the edges until the whole pie is closed. Using a knife, make four slits in the top.

  10. Place pie on sheet pan with parchment paper. *or make sure to spray/grease pan if you don’t have parchment paper.

  11. Brush the pie with egg wash then top with turbinado sugar.

  12. Repeat steps 7-11 until all pies are finished.

  13. Preheat oven to 375 degrees.

  14. Place pies in fridge for 30 mins.

  15. Put cold pies in oven for 20 mins or until the pies are golden brown.

  16. Cool for at least 10 mins and enjoy!

Tips:

  • You can use 2 granny smith apples if you don’t have 1 of the sweeter apples.

  • Use leftover filling to top on vanilla ice cream

  • You can use homemade dough if you would like, but pre-made works great.

  • If you don’t have turbinado sugar, you can use brown sugar or even regular sugar.

  • Make sure not to bring excess liquid from mixture into the pie. It will make it soggy.

  • Change up the shape! You can even do rectangle shapes or square. You can make bigger ones or smaller ones. Just make sure you don’t stuff the pies too much or they will spill out.
