No-Bake Chewy Granola Bars


Ingredients:

  • 1/4 Cup - Coconut Oil

  • 1/4 Cup - Light Brown Sugar

  • 1/4 Cup - Honey

  • 2 Cups - Granola

  • 1 Cup - Rice Cereal

  • 1/4 Cup - Chocolate Chips

  • 1/4 Cup - Peanut Butter Chips

Preparation:

  1. Line an 11x7 baking dish with parchment paper.

  2. Combine coconut oil, brown sugar, and honey in a small saucepan.

  3. Cook over medium heat until boiling, then reduce heat and cook until all the sugar is dissolved, stirring frequently.

  4. Meanwhile, measure out the granola and cereal in a large bowl.

  5. When honey mixture is finished, pour over granola and cereal and stir to thoroughly coat everything.

  6. Spread evenly into lined baking dish and top with chips, pressing lightly.

  7. Let cool about 5-10 minutes, then cut into bars or squares.

  8. Serve and enjoy!

Tips:

  • You can use butter as a substitute for the coconut oil.

  • If your bars aren't staying together well, place in the fridge to harden up some.

  • If you use a standard 9x13 baking dish, you may either double the recipe or only use about 1/2 - 3/4 of the pan to keep the bars nice and thick.

  • Break up any large clumps of granola as you want smaller, bite sized pieces.

  • Get creative! Use a combination of flavored chips, different flavored granola, or even Cocoa Krispie cereal!
