Oatmeal Bake Bars

These oatmeal bars are great for breakfast on the go.

Ingredients:

  • 2 Cups - Old Fashioned or Steel Oats (or combination of both)

  • 1 TBSP - Cinnamon

  • 1 TSP - Baking Powder

  • 1 Cup - Walnuts

  • ¾ Cup - Honey

  • 2 Cups - Almond Milk

  • 1 - Egg

  • 1 TBSP - Vanilla Extract

  • 1 Banana

  • 1 Cup - Blueberries

Preparation:

  1. Preheat oven to 350º and spray a 13x9 pan thoroughly with cooking spray.

  2. Combine milk, egg, and vanilla extract. Set aside.

  3. Combine oats, cinnamon, baking powder, blueberries, and nuts. Stir to combine.

  4. Add honey or syrup and mix until all ingredients are evenly coated.

  5. Pour into pan and spread evenly making sure no gaps are seen.

  6. Pour milk mixture on top.

  7. Add blueberries and sliced banana.

  8. Bake 35-40 minutes until done, then let cool for about an hour.

  9. Serve and enjoy!

Tips:

  • Don’t skimp on spraying your pan. Make sure to spray up the sides some too.

  • A rubber spatula with a little cooking spray works best to mix the oatmeal mixture.

  • Get creative! Use pecans or almonds, strawberries or raspberries, coconut milk or regular milk. The possibilities are endless!
