Oatmeal Waffles

This recipe makes about 30 small waffles. I make them in a big batch like this to freeze them for my husband and I to make when we want a fast breakfast. I love these because they are not super sweet so they go great with anything you want to put on them. If you want to make a smaller batch, cut the recipe in half!


Ingredients:

  • 3 Cups - Flour

  • 1-1/2 Cups - Quick-Cooking Rolled Oats

  • 2 TSPS - Baking Powder

  • 2 Tsp - Cinnamon

  • 1/4 Tsp - Nutmeg

  • 1/4 Tsp - Salt

  • 4 - Eggs

  • 3-1/3 Cups - Milk

  • 12 TBSP - Butter, melted

  • 2 TBSP - Agave Syrup (or 6 TBSP of brown sugar if you want it sweeter)

  • Cooking spray

Preparation:

  1. In a large bowl, mix flour, oats, baking powder, cinnamon, nutmeg, and salt.

  2. In a small bowl, stir together eggs, milk, butter, and agave syrup.

  3. Add the liquids to the dry ingredients and stir until blended.

  4. Spray small waffle iron with cooking spray. Using a 1/4 cup, scoop up mixed ingredients and add to the waffle maker. Do not open the lid while waffle is cooking as it will rip the waffle in half.

  5. Top with syrup, honey, peanut butter, cookie butter etc.

  6. Serve and enjoy!

Tips:

  • You can use regular rolled oats for a crunchier texture.

  • These are great for freezing but they can also be refrigerated for up to 3 days.

  • Pop these in a toaster and they are ready to be served!

  • If you want this as more of a dessert type thing, you could always add ice cream and make a waffle ice cream sandwich.
