One Pot Jambalaya

One Pot Jambalaya


- 2 Tbsp. olive oil - 1 1/2 lb. chicken cut into pieces - 12 oz. beef sausage cut into slices - 1 tsp. salt - 1 tsp. pepper - 1 medium onion finely chopped - 2 stalks of celery finely chopped (or 1 cup) - 1 large bell pepper finely chopped (or 1 cup) - 4 cloves garlic crushed - 1 tsp. thyme - 1 tsp. basil - 1 1/2 tsp. cajun seasoning (or 1 tsp. cayenne pepper) - 1 Tbsp. Worcestershire sauce - 6 oz. can tomato paste - 15 oz. can diced tomatoes with juice - 2 ½ cups long grain white rice - 5 cups chicken broth


1. In a large pot add 1 tablespoon oil add chicken and cook over medium heat for 8-10 minutes, or until it is cooked through. 2. Halfway through cooking your chicken, add your sausage. 3. Remove meat from the pot and set aside. 4. Drizzle another tablespoon of olive oil into your pot then add onion and cook for a min or two. Then add your celery and bell pepper. Cook for 6-8 minutes, or until vegetables are almost tender. Add garlic and saute for an additional 2 minutes. 5. Add your seasonings to the sautéed veggies. 6. Add Worcestershire, tomato paste, and diced tomatoes to your veggies. Stir to combine. 7. Add the chicken broth to the pot then your meat. Stir to combine. 8. Next, place rice and 5 cups broth in the pot. Stir to completely combine. 9. Bring contents to a boil and then reduce heat to low. 10. Cover the pot with a lid and let simmer for 30-40 minutes. 11. Top with parsley and enjoy!

Notes: - You can always add less or more of the cayenne or cajun seasoning depending on the spice level that you want.
