2 bundles asparagus
1.5lbs Cod, 4 pieces
2 tbsp butter
1/4 cup white wine (or chicken broth)
1/3 cup parmesan, shredded
1 large lemon (zested and juiced) *1/2 juiced for butter mixture and 1/2 to top asparagus
1 tbsp garlic, minced
1 tbsp fresh parsley
1 tsp paprika
2 tsp Sicilian herb seasoning (or Italian herb)
1 tbsp olive oil plus some for the bottom of the pan
Salt & pepper to taste
Preheat oven to 400 degrees.
Using a large sheet pan, drizzle oil on the bottom of the pan.
Add asparagus on one side. Drizzle olive oil over the asparagus, top with salt and pepper. Squeeze 1/2 lemon and put aside.
In a small sauce pan, heat butter on medium high until melted. Add garlic and brown.
Turn heat to medium and add lemon zest. Stir and brown for a minute before adding the white wine. *that will scrape up the brown bits
Once the pan is deglazed, add remaining lemon juiced and parsley. Stir and put aside.
Using a paper towel, pat each piece of cod dry before topping with salt and pepper.
Place cod on sheet pan.
In a small bowl, add parmesan, paprika and Sicilian herb seasoning and mix.
Pat each cod piece with parmesan mixture on both sides until all is used.
Top Cod with the lemon butter garlic sauce.
Place in oven for 15-20 mins. Temp for fish should be 145 degrees.
Notes/Quick Tips:
You can also use tilapia and even salmon for this recipe. Most fish will work for this.
You can use any kind of veggies for this dish. I would suggest maybe trying Brussel sprouts or broccoli with this.
Serve with rice, pasta or bread. You are gonna want to soak up all the juices in this dish!
