
Ingredients:
40 frozen mini pancakes, thawed
1lb maple sausage, cooked
6 eggs
1 1/2 cups heavy cream
1 cup milk
1 tsp vanilla
2 tbsp sugar
2 tbsp maple syrup, plus more to drizzle on top
Preparation:
Grease 9 x 13 pan.
Lay all pancakes stacked up right in a row until all pancakes are in the pan.
Place cooked sausage on top of pancakes and in between.
In a large 8 cup measuring cup or bowl, mix together eggs, heavy cream, milk, vanilla, sugar and maple syrup.
Pour egg mixture over sausage & pancakes.
Slightly shake the casserole to even out the mixture.
Cover and refrigerate overnight.
Uncover and remove from fridge and let sit while the oven preheats to 350 degrees.
Place in oven for 60 mins until center is set and not jiggly.
Remove from oven and drizzle maple syrup on top.
Enjoy!
Tips:
Try adding cinnamon for added flavor.
Don’t have maple sausage, regular is fine! You might want to add a little more maple syrup in the mixture for added flavor.
Can’t find the mini pancakes, buy 20 of the regular frozen pancakes and cut in half.
Gluten free? Use gluten free pancakes!
Try waffles if you wanna change it up.
