Parmesan Garlic Roasted Carrots

Ingredients:

  • 10 - Whole Carrots

  • 2 TBSP - Butter, melted

  • 1 TBSP - Minced Garlic

  • ¼ Cup - Grated Parmesan Cheese (plus more for sprinkling)

  • Fresh Parsley

Preparation:

  1. Preheat oven to 450º and line a baking sheet with parchment paper.

  2. Peel carrots and slice in half crossways, then longways to get 4 pieces.

  3. Mix butter and garlic and coat carrots. Arrange on baking sheet face down.

  4. Place in oven for 15-20 minutes, flipping once halfway through.

  5. Remove from oven and sprinkle with cheese.

  6. Return to oven for about 5-7 minutes until browned and caramelized.

  7. Once finished, place on serving tray, sprinkle with a little more cheese if desired and some fresh parsley.

  8. Serve and enjoy!

Tips:

  • Make sure to use whole carrots as baby carrots won’t caramelize as well.

  • I found the cheese had enough flavor and salt already but you can add a little salt and pepper to taste.

  • Get creative! Try this with other hardy vegetables such as potatoes, brussel sprouts, broccoli, or asparagus. Just remember to adjust cooking times as needed.
