Pasta Salad

  • 1/2 lb pasta, such as mini farfalle or penne, cooked

  • 8oz mozzarella

  • 1/2 lb meat, such as salami, pepperoni, ham etc.

  • 1 1/2 cups cherry tomatoes, sliced

  • 1/3 cup pepperchinis

  • 1/4 cup diced red onion

  • 1/4 cup olives, if desired

  • 1/4 cup peppers, diced if desired

  • Salt & pepper to taste


Dressing


  • 3/4 cup olive oil

  • 2 tbsp red wine vinegar

  • 2 tbsp water

  • 1 tsp garlic, diced

  • 1/2 tbsp sugar

  • 2 tsp Italian seasoning

  1. Combine all dressing ingredients in a small jar, cover and mix. Set aside.

  2. Combine all pasta salad ingredients.

  3. Add dressing and mix.

  4. Taste and add salt & pepper to desired taste.


Notes/Quick Tips:


  • You can add all kinds of things of ingredients to your pasta salad. If you want to change the flavor, you could do mexican, greek etc. Just add whatever ingredients you want to the dish.

  • If you don’t have red wine vinegar, you can sub for white wine vinegar.
