Peach Salsa


Ingredients:

  • 4 Each - Large Peaches

  • 1/2 Tsp - Olive Oil

  • 2 Each - Serrano Peppers

  • 1 Each - Small Onion

  • 1 Each - Beefsteak Tomato

  • 1 Each - Lime

  • 1/2 Tsp - Salt, divided

  • Handful of Cilantro

Preparation:

  1. Cut peaches in half and remove pit.

  2. Brush with olive oil and season with 1/4 tsp of salt.

  3. Place on grill facedown for 20 minutes or until tender but firm and not mushy.

  4. Meanwhile, mince peppers, chop onion and tomato, and place in bowl.

  5. Once peaches are done, allow to cool, then chop into pieces and add to bowl.

  6. Season with remaining salt and top with fresh chopped cilantro.

  7. Allow to chill in refrigerator for about 30 minutes.

  8. Serve and enjoy!

Tips:

  • If you can't find serrano peppers, any hot pepper will do or you can leave them out all together if you don't like spicy.

  • If you don't have access to a grill, you can cook peaches on the stovetop in a grill pan or faceup in the oven at 350º.

  • Get creative! Serve with chips or grilled pork or fish!
