Perfectly Cooked Filet Mignon


Ingredients:

  • 1-2 Each - Filet Mignon

  • 4 TBSP - Butter

  • 2 TBSP - Olive Oil

  • 1 Tsp - Dried Rosemary

  • 1 Tsp - Dried Thyme

  • Salt & Pepper to taste

Preparation:

  1. Season meat with salt and pepper on both sides. Set aside.

  2. Heat oil in pan over medium high heat. When oil is just about to smoke, add meat.

  3. Once browned, flip and brown second side. Once both sides are browned turn the meat to brown all the sides.

  4. Once all sides are browned, add butter, rosemary, and thyme.

  5. Continue cooking and basting the meat with the melted butter until done.

  6. Remove from heat and allow to rest in pan for 3-5 minutes.

  7. Serve and enjoy!


Tips:

  • If your meat is starting to cook too much, you can continue cooking in a 400º oven.

  • Medium rare: 135º, Medium: 145º, Medium Well: 155º

  • Get creative! Use fresh herbs instead of dried, add blue cheese and butter to cooked meat before serving...YUM!
